TERRA MOMO CHEF’S BIOGRAPHIES

Terra Momo Family of Chefs – At the core of our Terra Momo culinary philosophy is a deep appreciation for a, “taste of place”. We believe that food should speak eloquently of its provenance — its soil, its climate and the people who nurture it. It is in the hands of our chefs daily to communicate this philosophy to our community and guests through responsible sourcing and preparations. We are fortunate to have such a committed team of culinary professionals.

Chef Terry Strong, Mediterra – So busy walking the walk, he has no time to talk the talk. Early stops at Hopewell Valley Country Club and The Waterfront Restaurant before joining Terra Momo in 2000, he has influenced the menus at all of Terra Momo’s venues. Terry has anchored Mediterra as Chef since 2011 with menus that pay homage to its Mediterranean inspiration and the farmers from whom he sources.

Chef Emily Kirstein, Mediterra – The first to work every day, her enthusiasm and grit as Sous Chef is rare. After an impressive 12 years at Café Panache in Ramsey with Chef Kevin Kholer, Emily brings a bright perspective influencing seasonal offerings.

Chef Toni Charmello, Teresa Caffe – A warm welcome home to Toni. After 3 years at Eno Terra Restaurant then 4 years with Chef David Burke, finishing as Sous Chef at Tavern 62 by David Burke, Toni hangs her apron at Teresa Caffe. With refreshing vegetarian offerings and seasonal influenced additions, both her vigor and passion are warmly welcomed.

Chef Jason Hensle, Eno Terra – Inspire and Motivate” may be the easiest way to describe Chef Jason with his “anything is possible” demeanor.  With 15 years at the Executive level Jason has had early stops at The Molly Pitcher Inn, Park Avenue Café and Ruth’s Chris Steakhouse.  Focusing on streamlining and organization Jason will be approaching his 1st year anniversary with the Terra Momo group in October and is excited for the continued growth of the brand.

Chef Charmaine McFarlane, Terra Momo Pastry Chef 

Master Baker Denis Granarolo, Terra Momo Bread Company – We’re glad he didn’t become a dentist! Recruited directly from France, our unsung hero is seldom seen, but for 20 years with every bite of his breads and pastry we know he’s manned his post. “If thou tastest a crust of bread, thou tastest all the stars and all the heavens.” – Robert Browning

The Mount Family – Terhune Orchards, 200 acres of fruit, vegetables and vineyard owned and operated by Gary and Pam Mount and their daughters Reuwai and Tannwen. The farm is recognized as a leader in sustainable agriculture practices and community engagement. They host seasonal farm festivals and welcome visitors to the farm.  The farm store and winery are open year-round.
